They're not converting with the argument that "our God is the One True God", they're saying:

  1. Our gods are "better" than your gods.
  2. If you convert, we'll give you tax relief (this in TR).
  3. You'll also get less hassle from our patrols and everything will be more peaceful.

The Lunars are quite keen to include other gods rather than excluding them. The only ones that really give them pause for thought are the "dangerous" ones, like Orlanth, Babeester Gor and Urox, whose followers will *insist* on rebelling/resisting for the most ludicrous and illogical reasons! ;)
