Foraging. Hunting. Eating at battlefields. I agree, these beasts are tough to maintain. Its probably one of the reasons why they are in such short supply. Dried rations is probably an option or something that smells like meat but isn't (Purina Augener Chow). Of course, herding along soem cattle/sheep/prisoners/whatever along with the main army would allow the fast-moving avilary to feed their mounts and then return to the front.

It all depends on their role. Are they shock-cavalry or scouts? Skirmishers (and hence foragers/hunters) or employed in large bodies where centralized supplies work best?

I use them as very scary scouts but I may be flying in the face of Imerial doctrine...
