Consider the keywords to be suggestions rather than hard-and-fast "professions", especially where virtues or passions are concerned - you certainly can't say that all (even Orlanthi all) wariors are Boastful or Brave to the exclusion of other personalities, but a majority have at least one of those traits. An Orlanthi man *should* embody the seven vitrtues, but you can still worship Orlanth even if you are selfish and cowardly (of course, you may become the protagonist in a story about how not to act, and you may be infested with Agents of reprisal, but you can still do it.)

If you want to design a character that is a warrior who does not Ride, feel free. If you don't want him to be either brave *or* boastful, go ahead. If your narrator is reasonable, he may allow you to substitute abilities (I'd keep it within the same type of ability - Personality for Personality, not "I'll trade 'Brave' for 'Shoots fire from his mouth'".)
