I don't know the exact formulas, although obviously more trade routes, and having the market blessing, and maybe having a bigger Issaries temple, all combine to make your market more frequent.

You'll notice that if you have an annual market you get a boost to your goods at the end of Sea season (presumably when the annual market is). If you have a seasonal market you seem to get some goods at the end of each season.

Aside from that timing issue, really the more frequent markets are a reflection of the fact that you have more trade happening, and more goods coming into the 'treasury.' So for the most part it is more a result and added flavor than anything else, but that timing of when you get your profits is occasionally important (i.e. if you have an annual market, and you need 24 goods for your sacred time sacrifices, and you have 64 goods right now, you probably shouldn't build a temple, unless you are willing to lose one of your shrines in sacred time, or are confident that you can get goods through trade or raid during storm season, because it is unlikely that your clan will generate ten more cows worth of goods from the crafters between now and sacred time. With a seasonal market, you are probably safe building the temple).
