Yes, they work the land. The heads of cottar families work vegetable gardens, or herds, etc.

All Saratarite farming is mixed use. The percentages of the use vary from farm to farm, depending on the nature of their land and the available resources. It includes: grain farming, vegetable farming, orchards, pigs, sheep, cattle, poultry of various sorts, fishing, wild food gathering, hunting, trapping, and I'm probably forgetting something here.
