In my opinion, there are several partial answers to this.

Gloranthans acknowledge that different people's have different deities. They may describe them as lesser or as evil or as dangerous or as mistaken understandings or even as inconsequential but generally do not deny their existence or their powers.

Gloranthans' understanding of their deities is not static. Over long periods, a culture's understanding of their deities can change, informed by the influences from their neighbours. This can be as straightforward as acknowledging that it is the same deity with different names, eg. Erissa and Chalana Arroy. Or as complex as Monrogh's vision of the many suns and the mass conversion of Dragon Pass Elmali to Yelmalio.

The deities are far more complex than their worshippers can understand. At the deepest level, Orlanth, Worlath, Kolat, Storm Bull, Urox and Dobdurban (and all the other entiities of Storm, Air and Wind) are one, despite the different approaches to worship of their followers. Orlanth is Air is the Air Rune and accepts worship in many different fashions that Gloranthans believe is incompatible.

The answer to how specific Gloranthans will behave will come down to a lot of variables, no different to our world. What are their levels of education? What are their personalities (rigid vs accepting)? What are the the relations between the cultures they represent? What is the relative status/power of the individuals? And, of course, what are the needs of the story?
