I think all dwarves have an occupation which they perform to the near exclusion of everything else, even if it is something like polish brass 1w6.

Dwarves are not wizards so I don't think all of them will have access to a grimoire. You should consider something like the HW piety skill and call it attunement (to the World Machine) to represent their base magic abilities.
IMO they get "tasks" not from grimoires but from their attunement to the chosen vessel (the rock bowl, the crucible of iron etc) during their sacred time tasks. You could consider them to be reforged if it helps. Most dwarves would only learn "tasks" suitable to their assigned purpose in life or their hobby.

They would be the closest to true wizards. AFAIK their magic is geared to recovering energy and converting it into matter for the Machine.

I think it's more like:
I, as a Mostali, know the details of the Plan but because of
my defective creation out of the clay jar, I (and other dwarves)
am unable to sense the cogs for the machine. Other races have
attributes of freethought that I and other dwarves lack. Only
they can unravel the deeper mysteries of the plan and explain
them to us.
If we reveal the Whole of the Plan, they will destroy us as they
very nearly did with the machine city. So with suitable inducements,
I reveal portions of the Plan to different outsiders and see what
they can make of it. By observation, I shall obtain their insights
to deepen my understanding of the Plan. I shall prevent outsiders
from knowing too much of the plan, by liquidating them if need be...
