Trollkin are far from an exhaustless supply. If you do the maths - and I've written an analysis of this for my new web page, coming soon... - you'll find that trollkin are comparatively rare and valuable. The trolls are not going to turn up their noses at more slaves if they can get them. In my view, trolls only eat those who aren't otherwise valuable.
Having said that, I don't think all the survivors were in wretched servitude. A working model for my mind would be the french resistance (at least as displayed in some of the more bigoted old tv shows...) with most co-operating out of fear, some co-operating to lord it over their fellows, and some fighting back in big or small ways whenever possible.
Also, don't forget the Old Pavic - Dwarf connection. A significant number will have survived through hiding.
