>A lot of cultures combine Animistic and Theistic worship,

A lot of cultures may have animists and theists but individuals do not normally combine the practices in such cultures (c.f. the Heortlings).

>the Hrestoli Church combines Sorcery with Theism and the Lunar empire
>allows everything although usually only one for a particular individual.

The Hrestoli Church does not combine sorcery with theism as it is strictly monotheist. The Carmanians (who you might be thinking of) do have sorcerers within a theistic community but their caste laws forbid people from mixing the two. The Safelstrans have a similar composition but mixers are more likely to be common due to its splintered religious ideals (not that they are more tolerant but that the city-states might have radically loopy ideas on what's hot and what's not).

The Lunar Empire allows everything and cares little about whether people mix magics or not. People normally chose one way nevertheless.

>So a troll calls on the spirit of her grandmother (Animism)
>in the same way as she calls on Kyger Litor (Theism).

Kyger Litor is mostly worshipped as a Great Spirit.
