There have been some good answers to this already, but I'd just like to elaborate a bit on the subject of Undeath. There are essentialy two very different sorts of Undeath. Chaotic based and Darkness based.

Darkness based undeath is a hangover from the Great Darkness when the world was broken and nobody could seperate the living from the dead. It was literaly a time of Hell on Earth. The Trolls have a special form of this available because they were orriginaly natives of the underworld. Their undead are literaly the spirits and souls of the dead active in the world. In fact it's not realy 'un'-death at all, because they realy are dead. This sort of undeath is bad from a mortal, human perspective but it's fixable. Just send 'em back where they belong.

The chaotic undead are trying to avoid death completely and short circuit their way out of the whole life-death cycle. The classic example that has been cited is Vivamort, who's terror of death drove him to such extremes. He has no power over death, and indeed risks utter annihilation from any contact with it. He discovered that by consigning others to the Void (a manifestation of Chaos) he could feed off the waste energy released as a by-product, and thus avoid oblivion himself. Of course taken too far this will ultimately lead to the destruction of the universe.
