Your description of the sacrificing Light Priest sounds fine to me.

There's no reason to believe priests of the Sun Dome Temple don't sacrifice animals. They're a warrior cult: a bit of blood isn't going to scare anyone at their rituals. If Light Priests march with the army (and they do), they would surely sacrifice in the field before battles. You don't imagine the Sun Dome mercenaries who fought at the Battle of Moonbroth did so without the comforts of their religion on the morning of combat, do you?

And a goat would in my opinion be an acceptable sacrifice -- we see Sun Domers eating goat in "Gaumata's Vision," so they don't have appear to have the same "taboo" status as among the Orlanthi. (And if even they were "unclean" animals, it could still be appropriate to sacrifice them: "Yelmalio wants us to ritually destroy goats" / "The flesh of goats is reserved for the Gods").

(Besides, it could be an impala kid!).
