I decided to stick with just two traits, Small and Large, to make comparison between different creatures simpler. The Narrator should use their judgement in what a given creature can use its Large or Small for. The only exception I can recall is high llamas, which I gave a Tall rating which exceeded their mere Large. Its the Tall you use to augment your attacks when you're riding the high llama (assuming its appropriate for you to get an advantage from the increased elevation, of course).
