I'm assuming that if the attacker did use a decapitation action, the vampire would have to use an ability to defend other than the "can't be killed one", right?

Presumably by tends to be good enough that aiming for the neck is a matter of course, or something like that.

I would play it up as a growing sense of despair and futility ("What are we going to do? We can't even HURT it, let alone kill it!"). Add in some fatigue and the occaissional counterblow by the vampire. Eventually, the hero will be utterly exhausted and demoralized (i.e. AP 0), leaving the vampire to do whatever parting shot it wishes (leave, capture, eat, whatever).
