As I understand it (I'm no rules expert):

"Two-sword fighting" has the same use as "sword fighting" or "bar stool fighting". It's fighting, with a specified weapon combination. The weapon name is for colour and coolness, it has no rules effect.

Except, that is, that you need the equipment for the job, and having got it, get the bonuses for such equipment.

One sword: +3
Two swords: roolz say +6 (simulationist arguments about the reality of using two full-size swords at once ignored)
Bar stool: +1 (at a guess)

(Aside: must remember to give my next PC a skill in something with a +10 bonus!)

In simulationist/I do this for "real" mode, it's entirely possible to fight three opponents at once using one sword. I'd rather have a dagger as well, or a shield as well, for the +1, but you can attack three people with a single sword, a sword+dagger combo, or presumably a bar-stool. The specified weapon is not relevant to the number of attacks. Being good at using whatever you're using is.
