What you can do is have them note how many arrows/ daggers/ javelins they have. Once they run out, have them switch to another mode of attack or whatever.
in the game I run, I have an accomplished archer. I usually run the archery as simple contests. We have done a couple of contests as extended, but they have always ended up as victories so far for the group.
One thing I tried in one game was to apply the injury result (wounds) to the person hit by the arrow.
Just a few ideas.
