The long write-up of each religion, in ST and TR at least, gives details of the spirits of reprisal for each one. What they can do, circumstances in which they're sent out.
I'm pretty sure you'll find that the information on what each cult will and won't allow is in the writeup for that cult. Though there probably isn't a neat little chart.
A lot of the "and you can't join this other cult as well" isn't explicit. It's assumed by things like the multiple statements that Orlanth and the Red Goddess are at war, and trying to destroy each other.
