Correct. Except that it doesn't seem that strange. As a fencer, I can suddenly make an a risky attack like a fleche. As a defender, I do have choices, but I have a lot less control over the degree of risk.

I think too the game would be slower and not work as well if both sides got to participate in every bet. Especially if a superior opponent could always up the bets against him -- wouldn't be any fun if you were on the inferior side (never a fun side to be on anyway).

Followers are not intended to have lots of personality -- think of Star Trek redshirts. If you want a flexible horse, make it an ally (in which case it may have a mind of its own and be off visiting the mares when you most need it -- roll your Ally rating to check!).

A horse follower would most likely have a rating in Strong (to augment you in a charge) and one of the running abilities.

Patrons are Narrator characters, so this is probably best a collaboration. If I decide that my character is daughter of the clan chief, my Narrator probably has some ideas as to who the chief is.

Patrons actually worked out fairly well when we used them. They weren't around much but could be called on for favors. And once in a while they called on you...
