Extended contest, hunters Stalk/Ambush/Hunt skill vs. Deer's Alertness/Stay Alive skill. Once the deer is below 0 AP, the hunter uses a single shot, changing to Ranged Combat for a parting Shot or Coup de Grace. If the Hunter is any good, he'll have reduced the deer to Wounded (-11 to -20 AP, -1 ability) or even Injured (-21 to -30 AP, 50% ability) BEFORE he shoots, thus making the defence weaker. If he can get the deer to Dying (-31 or lower AP), it's a certain kill. Bid high on the stalking, remember, while the hunter has positive AP, the deer does not know it's being stalked.
