What about pigskin? And pigs can be fed on acorns and nuts without having to clear forest. There's also no need for them to be hairless wimps like modern pigs. Feral pigs that are closer to wild boar genetically would be quite hardy. They're also pretty good at protecting themselves compared to sheep. There might be truffles for the pigs to collect or other valuable natural products.
