IMO Pela, goddess of barley.

The DHappans call it 'sikaru', not 'beer'.

It's a women's mystery, and traditionally few men were allowed to partake.

The women brewed it during the hunting season, natch.

Things are somewhat easier for men since the end of the Second Age. The leftovers are now stored in sealed clay jars, and sometimes even given to the men for their own purposes.

The brewing secrets remain inviolable.

Unlike the richer, stronger, more modern Kerofinelan varieties of beer or ale, sikaru is brewed ("distilled" would be an exaggeration) in wide copper cauldrons. When ready, the women place themselves around the cauldron with long reed straws, and engage in a good bout of communal drinking/gossiping.

Recently, MoonSon (Praise Him !) has issued decrees that certain favoured Apparatchiks can legally declare themselves as temporary women, so that the ancient women's rites have at last been infiltrated and seem set on a collision course with catastrophe.

They are beginninjg to whisper and plot around the sikaru cauldrons ...

PS There is also some marginal brewing of rice beer, unworthy of more than a footnote IMO ...
