Allow me two responses: first, the AH Sun County book describes (wonderfully, if I might add) the Sun County of the River of Cradles - who are a different folk with different traditions than the Sun County of Sartar. Although there are a lot of superficial similarities between the two Sun Counties, they are at base different cultures with very different histories.
The second response is that O:iD describes the fighting style of the Sartarite Sun Dome Templars in some detail.
