I dearly look forward to seeing as many of our American neighbours as possible at Tentacles this year (I'm still dodgy on coming, but hopeful), but feel that the offer to bring the cheese has just caused most of our European friends to start crying with laughter, if not something far more embarrassing. With all due respect to Wisconsin cheddar, and a few other places with decent dairies, the U.S. is a cheese wasteland. Do you not realise that "American cheese" is a recognised legal term worldwide for pasteurised process cheese? Weird orange sliced stuff covered in plastic is not cheese! Then there's Cheez Whiz, an American icon. I have a friend who used to work in a dairy, and that's what you got if you fucked up the vat. I mean, talk about lowest common denominator. ;-)
In all seriousness, can you actually get any Mexican cheeses where any of you live? I hear that they have heaps of good, locally-made stuff in several different varieties, which occasionally make it north of the border.
If you want good cheese (e.g. 5-yr-old Canadian cheddar), I could probably bring some...
