Smoking doesn't need a hut. It's no doubt effiscient for smoking a lot of meat at once, but game can be smoked in the woods with equipment created on the spot. Basically you need some kind of rack to hold the meat, and a good smoky fire. This is stuff our stone-age ancestors did very well.
