The Holayans are Orlanthi, most of whom now worship the Lunar gods along with their traditional gods and goddesses (Ernalda, Barntar, Issaries, Lhankor Mhy, Chalana Arroy, Elmal, Redalda, etc). However, there are plenty of anomalies, local oddities, and little cults we've never heard of. You will likely find Dara Happan cults in Mirins Cross - but Yelm and Shargash will have plenty of difference from how they are worshiped in Raibanth or Alkoth!
