Instead of cavalry, how about chariots? Maybe with enclosed bodies and pulled by something amphibious, so that they can go from land to water? (although they'd still have trouble with soft mud).

I can see a horde of of duck warriors in their chariots, skirmishing with the enemy, peppering them with crossbow bolts, harsh words, and cigar ashes, flowing across the land and out onto water and back again, in a manner than few other forces could match (or would want to).

Something like a coracle

Well, and maybe a couple of built in amenities, like a quiver for holding the crossbow bolts, and a slightly smaller one for holding cigars.
