Being picky here, but Loki is so Disorderly that he was actually the mare, not the stallion, according to the Prose Edda.  

I do like the idea that the great giants can choose their form, as needed.  I do wonder if they are more the spirits of the mountains than the mountains themselves.  I do remember one of the giants worrying about what harm the dwarves were doing mining inside one of the great Rockwood mountains, which would be evidence (assuming she really knows what form the mountains are) that the mountains are the giants.
