We've done plenty combats (physical and spirit), but I don't remember anyone using a parting shot. However, there were some big bids in there...

Yes, on rethinking the Spirit Combat options, I think I would allow a parting shot there, or there will be very few spirits other than 1- use even for Shamans. Not a coup de grace though, that's too easy an Integration.
