I have one or two comments upon your conclusions 1) Flavour - often the proportion of fat in the tissues, are they eaten raw? No problem here.
2) Fertility - large breasts for milk and a sturdy pelvis. 3) Intelligence - ?
Perhaps they would like to breed for lower intelligence, after all with big breasts and a sturdy pelvis, they are just asking for some Tom, Dick or Harry to raid the herd and then get Free Int cast upon the booty ;-). 4) Hairiness - including colour.
5) Size - faster growth rate and greater potential. One beast is easier to guard than many although it doesn't seem to have been an advantage for the Rhino tribe. The males are more unruly so size in them may be bread out? I'm not sure on the validity of breeding for small males and expecting large females. Besides, in most RW situations, though the males can be aggressive, they are certainly not as aggressive as the females are when there are young around. In most situations, ownership of a large male is seen as high social status in many societies.
6) Diet - they need to be able to feed them any old matter and still survive.
Surely that is eat anything and thrive rather than survive.

That leaves us with a herd of (stupid?) docile (sometimes) big hairy females with large breasts being serviced by small (numbers of) males (since those not selected for breeding would be castrated for quicker fattening).
