These farmers haven't had fertility goddesses for quite a while (since the Abiding Book came out). The Kingdoms of Loskalm and Seshnela derive spiritual strength by ensuring that their farmers are free from error and that includes things like the aforementioned fertility goddesses. Further east and south (i.e. Junora, Jontalela, Janube, Safelster and Umathela), you will find the peasants doing this sort of thing but the lords are either backward or heretics.

Malkionism has plenty of 'sacrifice' mythology, (the most important secret about Malkion is how he sacrificed himself to save the cosmos) but this does not require that they view the sun as a divine being or representative of their God.

And the Waertagi are really henotheists rather than pure monotheists like the Malkioni. Like most Malkioni, they were originally faithful but fell to worshipping false gods in the Great Darkness. Unlike others, they never purified themselves of this error.
