We build ships that work properly instead of relying on prayers to compensate for human work.

I would think some device or technique of shipbuilding which the dwarves are keeping to themselves. Possibly it was invented after the Closing or alternatively the Closing removed the technique from human knowledge while the dwarves had kept proper records.
