Pay close attention to the forecast for the year. I tend to set:
60 wheat
20 barley
20 rye
in a good year, and reverse the wheat and rye in a bad year.
Also, learn the anti-spoilage rituals (Friend of Yinkin and something else that's slipped my mind); and try "Spare Grain" as well.
