The real key, I find, is getting the productivity per farmer up. Barntar, Ernalda, Orlanth, Maran Gor, and Elmal all have blessing that will help with that. Some combination of those backed up with a succesful quest to Ernalda for increased crop yield and probably some herd and hunting blessings should mean that you can have excess food with less than maximum crop land. But not _too_ much less than the maximum or you'll probably encourage calls to split the clan--the farmers all want a good sized piece of land for their own.
Having said that, as the number of adults in your clan goes up and down you will need to adjust the amount of crop land all the same. Once in a while you get news that well over 100 children just initiated into adulthood--an event like that requires that you make adjustments!
