Bridges and fords, that's what knights guard (in proper Arthurian fashion). (It'a also a lot more convenient, as you don't have to patrol the road, just set up your pavilion at the site and relax until someone comes along...)
You can probably add passes and forest roads. Anywhere the road is constricted by terrain and people can't just "go around".
