Except that the three-world model is not something you chose to believe in, it is observable. The Sartarites know there are spirits because they live right next door to savage nomads who live and breathe spirits.
Sorcery is much rarer and mainly exists in the form of common magic spells that doesn't work too well when HeroQuesting.
