Because they are demented heretics. Dwarfs eat processed food not because they prefer it, but because it is convenient to store and transport. Now, of course the overwhelming majority dwarfs DO prefer processed food. But that's not the reason for the processing, at least not ostensibly.
Dwarfs traveling outside their caves for long periods of time must live off the land, and do so. They are not genetically forced to feed off the processed stuff.
