Tortillas are not the only way to eat maize! The people of southern africa (Zimbabwe, Botswana, South Africa, etc) eat maize as a staple food (much as the Japanese eat rice) and have never cooked a tortilla in their lives. Maize can be cooked as a porridge for breakfast (with cream, butter and sugar), eaten cold (like rice balls) for lunch and as a starch (similar to rice, potatoes or polenta) for dinner. Whilst there are certainly peppers and tomatoes in that cusine they are not absolutely necessary! There are many, many local varients that you can use for gloranthan cusine without using the stereotypes, particularly not a minor part of mexican cusine (which has many more wonderful things than burritos and tacos i.e. Texmex).
