I agree: nettles et al. [perhaps there is an interesting use for thistles - a 'rustic' translation of "Nemo me impune lacessit" is quite Orlanthian] have many potential uses - though I hadn't considered 'paper' - a good one!

In my Gloranthan scribblings certain Sartarite cheeses, particularly Colymaran Yarg* [named after Yargal, Curdthane of Orlanth and everwatchful  foe of squint-eyed Bryggi the Milkspoiler] are coated with soaked nettles after pressing and brining, to keep the cheese moist and preserve it from a variety of pests. The nettles impart a rather nice tang over the maturation process, too.

Gathering these would no doubt be a job for young lads, rewarded by the local cheesemaker (with no questions asked), and perhaps stolen from the nettle groves of the sages from other clans. Nettles can be assumed to be relatively common, but nettles from the blessed growths of God-Talkers and sages could be thought especially desirable.
