I can see the orlanthi being interested in the dominance fights that occur naturally. The practise of dogfighting or horsefighting on the other hand means deliberately mistreating the animals and making them fight in a confined space so that the natural ways of asserting dominance/submissiveness aren't an option. It's utterly vile, conducted for gambling (which doesn't really fit all that well in a society where you don't have true personal wealth, like coin) by people who don't care about the animals.

It just doesn't seem to fit the culture.
