I'd look to cinema with HQ for inspiration. If you think about race scenes such as Ben Hur or Phantom Menace's Pod Racers, then races tend to be one-on-one with other racers as ways of narrating how the two of you are jockeying for position.
The key I think is that a race is more exciting where there is a recognisable opponent to duel it out with, the other racers become merely obstacles to impede progress
